Pinot Gris and Pinot Blanc from the Acadia Vineyard on Underwood Mountain. We were surprised by how quickly the white wine picked up color and texture while fermenting on their skins briefly. We have been having a lot of fun playing around with skin contact for years in all our whites (though up until now it was almost never allowed for more than a day). With the Wallflower Project wines, we’re looking forward to exploring skin contact with whites as well and combining whites and reds as we ended up doing with the 2019 Romeo Red. These wines are our home for breaking with convention and having a good time making wine.
