High altitude Pinot Noir from the certified organic Acadia Vineyard planted at 1300 ft. The soil is composed of Ashy volcanic loess and loam enabling this windy vineyard to be dry farmed. This was 100% destemmed and treated extremely gently in the cellar with a combination of pigéage and a couple of gentle pumpovers. Aged in barrel sur lie with no racking…this will benefit from decanting if you open over the next couple of years. Otherwise it can easily age 5-7+ years in your cellar.
